Easy and delicious. Rosemary and thyme are the perfect combo for lamb, and the cayenne adds a very subtle kick to round out the flavor. As an alternative to grilling, I sometimes roast the full rack in the oven for an equally delicious and elegant preparation.

Super easy and delicious. I've made this several times now. Rosemary and thyme are perfect herbs to go with lamb chops.

This was so good and so easy, I've never cooked lamb before. One rack was perfect for two...I cut the rack into two rib sections. Came out on the rare side but was delicious. Served with couscous.

Simple and terrific! Try adding a bit of lemon zest for a bit of a kick.
I always marinate my lamb in yogurt to tenderize it even more. Do this and clean it off before the additional marinade. YUM YUM!

This was the BEST recipe; I've made lamb many many times, but not like this! I didn't cook the chops as long as the recipe stated as we like it rare. WOW So easy....I will use the marinade for boneless leg of lamb on the BBQ next.... Thanks Giada!

Thank you SOOOO much! I had never made lamb and it is what my mother in law wanted for her 79th birthday dinner. I saw you do this on tv then found the recipe and WOW - it is fantastic!!!!

We processed the Rosemary,Thyme, and cayenne with the coarse salt first. We were able to get the herbs nice and fine, before adding the Garlic and oil. I also found out my Food Processor did not want to work very well, so I tried the blender, and this worked nicely. Prepared 40 4oz lamb chops for a Medical staff dinner at the hospital where I work, and they were amazed at how perfect they were. We cooked them on a flat grill, with olive oil, and they did not take long at all to cook.
