I have not tried this particular recipe yet, but I will by tomorrow night. I love cooking portabella mushrooms and when I do, I never salt them before cooking them. The salt tends to bring out the moisture, so if you want them to be less watery, skip the salting before you cook them. This will also make them moist. This is a personal preference so please use your judgement. You may want to extract some of the moisture while cooking them.

I love portobello's, love tomaotes and mozzarella, so what' not to love here. I made this for one of my husband's friends and he went bonkers over it!!! Thank goodness I had extra portobello's and mixture, cause both he and my husband wanted more. That's all either one of them talk about. We've had my husband's friend over for dinner again and he asked if I was going to make "that portobello thing" again!! If you haven't tried this recipe you should. It's easy and very tasty...not to mention pretty good for you too!!!

This recipe is delicious. As a vegetarian, I am always looking for new recipes that will work for me as a main course and as a side for my family. This is really refreshing, light & yummy! Perfect summer dish. Made it the other day and added some fresh corn - great! Giada's recipes always win in my house!

so refreshing on a hot summer day! I added some balsamic vinegar & additional garlic to the mushrooms before grilling. Yummy!

Great for a fun party or for a relaxed evening with the family. I serve it with grilled pork chops marinated in a garlic sauce and herbs. My family goes CRAZY when I make this!! Love it!
