    I am in culinary school and had to prepare sandwiches today for our buffet. I used this recipe and tweaked it a bit. I added some grilled red pepper strips and before putting the top piece of bread I put a layer of fresh spinach. I also used Ciabatta bread instead of a baguette. It got rave reviews from everyone who ate it. Great recipe - thanks for making me look good!

    I wanted to make a dish with Japanese Eggplant and Zucchini which I had on hand; in addition I wanted to grill vegetables. We made on a smaller scale as it was only for 2. We just LOVED this sandwich, and although we had a couple of side dishes, it totally is not necessary. It was amazing and will be getting this receipe in a book of favorites. Thanks bunches:

    I made this exactly as the recipe stated. It is really really good!! I also made it for lunch everyday until I ran out of ingredients. I am out of the veggies now and am craving it again!! This is a keeper, for sure.

    MADE THIS TONIGHT AND IT WAS "FANTASTIC"....BECAUSE IT WAS FOR 2 I HALVED THE RECIPE AND BECAUSE WE LIKE GARLIC I KEPT THE 2 CLOVES..I DID PUREE ALL INGREDIENTS AS SOME HAD SUGGESTED AND WAS HAPPY WITH THE OUTCOME...I USED A LITTLE LESS SUNDRIED TOMATOES AND JUST POURED BOILING WATER OVER THE ONES I HAVE AS THEY ARE DRIES NOT IN OIL..I DON'T HAVE A LARGE GRILL PAN SO I DECIDED TO ROAST ALL THE VEGIES ON BAKING SHEETS.. USED RED AND YELLOW PEPPERS, REGULAR EGGPLANT (DIDN'T HAVE JAPANESE, MUSHROOMS, AND ZUCCINI...TOSSED THEM ALL IN THE MARINADE AND PLACED THEM ON BAKING SHEETS WITH A DRIZZLE OF EXTRA OLIVE OIL, ROASTED THEM ON 400 UNTIL THEY WERE BROWN AND SOFT...FOLLOWED ALL THE OTHER DIRECTIONS AND SERVED THE SANDWICHES ON MULTI GRAIN WHOLE WHEAT ITALIAN BAGETTE WITH VEGETABLE SOUP...MY HUSBAND AND I JUST COULDN'T GET OVER HOW DELICIOUS THE SANDWICHES WERE...I MADE LONG BAGETTES AND SO WE WILL HAVE THE OTHER HALVES FOR LUNCH TOMORROW..THANKS GIADA..A REAL KEEPER ! :

    Delicious!!!! I didn't use as many sun dried tomatoes, and still thought it was tasty!!! I also forgot to buy the goat cheese, so I substituted a little bit of cream cheese I had on hand. I have some left over grilled veggies, and will use them tomorrow for sandwiches....... love this recipe!

    Love it! As soon as I saw the ingredients, I knew my daughter and I would love it. I thought the sun dried tomatoes might be a bit strong, but they were perfect. I had some sandwich left over & saved it for the next day. I just took it out of the fridge about 1 hour before I was gong to eat it to let it get room temp. Wonderful!

    Had everything so gave it a shot. Very good used mild goat cheese and the people who say they do not like it did not even realize what it was and ate it all.
