    These sandwiches are fantastic! Perfect for summer entertaining. Although I am a vegetarian, I routinely add sliced oven roasted chicken to my guests' sandwiches.

    Super delicious! I love Giada's veggie sandwiches, and this one is awesome with all of the fresh herbs and the tangy goat cheese. Next time I will add some grilled onions to the mix.

    Thank you Giada for this awesome recipe. I made some tweaks because i didn't have fresh herbs on hand so i used 1/4 tsp each of the dry equivalents, i substituted swiss cheese for the goat cheese, and i used semi moist sun dried tomatoes from a bag instead of the kind in oil. Me and my boyfriend gobbled these sandwiches up they were so delicious.

    I had a hard time getting everything to stay on the veggies during the grilling, so I mixed the sun-dried tomatoes and herbs into the goat cheese. Delicious!

    Great flavors! We have a ridged grill pan that I use on our stovetop and when I tried grilling the first batch of veggies, the sun dried tomatoes started to burn before the zucchini and eggplant were cooked, so I roasted the rest in the oven at 425 for 20 minutes. Came out really good.

    Good sammich. I served it up with some sweet potato fries for dinner. I'm not a big fan of sun dried tomatoes in oil, I think that's what's gave it a weird flavor. And my boyfriend said it didn't keep well at all for his lunch the next day. I will make again.

    This is one of the most delicious sandwiches we've ever had. It is creamy and rich and very satisfying. This is a great way to use the eggplant and squash I grow in my garden.

    This is a super easy and very tasty sandwich. Def a meal, don't be fooled by it being a veggie sandwich. This would be really fun to prepare with the kiddos(not the grilling. Great way to introduce goat cheese and a healthy alternative to the lunchmeat sandwich. Add some Pasta Salad and you've got yourself a healthy meal.
