Great flavor. Used dried tomatoes instead and was terrific. Was driving to the picnic and my wife had to stop the car and eat one of the sandwiches to satisfy her craving. Made the house smell like a professional restaurant. Had extra veggies which we mixed with cous cous that night for a repeat performance and my other daughter raved about them. Thanks Giada and Foodnetwork... I'll be back.

This was very good and rich! I used toasted whole wheat buns and cooked my veggies in the skillet because I don't have a grill, and it was still great! It went very well with my sweet potato fries!

I made this for an outdoor concert. Very tasty! The sun-dried tomatoes and oil combo with the goat cheese make this dish. I made it exactly as written but used zucchini and red bell pepper since that's what I had on hand- this worked great. Also reduced the olive oil significantly. This was really good and my meat eating husband enjoyed as well. Will definitely make again especially if I am making sandwiches for a crowd.

Made this with a friend - we followed the recipe exactly, only substituting regular eggplant as the store didn't have Japanese eggplant. It was fabulous!

My boyfriend and I made this sandwich and loved it! The flavors are wonderful and we plan to make it again. We stayed true to the recipe except for the spinach as we felt the sandwich was big enough without it. For those looking for a lo-cal version I would use less oil and maybe thin out the spread a little bit. I never have been a big fan of goat cheese but loved it on this. A definite keeper.

This is very good as long as you like goat cheese, which I love! Even with no meat it is still a very substantial sandwich. I cut the baguette into 4 sandwiches and they were very filling. Also, even though this is a veggie sandwich, I'd say this is probably pretty high in fat with the goat cheese and the oil in the sun-dried tomatoes. All in all, a great sandwich!
