    Yummo! I added more herbs to the mix because I did not think it had enough. I didn't have any tarragon, so that was left out. I brushed the veggies with olive oil, salt, and pepper before grilling instead of the sun dried tomato mixture. The mixture was too messy to put on the grill, so I tossed the cooked veggies in the mixture after it was grilled. I also did not have any goat cheese, so I used fresh mozzaarella cheese and I used an english muffin instead of a baguette. So obviously I did not follow the recipe too closely, but used most of the same ingredients and it was a HOME RUN!!! Thanks Giada.

    My boyfriend and I made this today for lunch and it was pretty good. Since it was just the two of us, we cut the recipe in half. I didn't have any fresh herbs, so I used dried and it was just fine. I also sweated the eggplant, it makes the texture better and the flavor less bitter. Because of this step (which requires salt, I didn't add salt to the oil mixture. None of the grocery stores around me carry Japanese eggplant, so I used regular. Next time I make this, I will do as another reviewer said and put the tomatoes in a food processor with the oil. They're a little too chewy for my liking, but I love the flavor.

    I made this for my boyfriend who loves his meat and potatoes, but even he thought it was fantastic! : We couldnt stop eating it! Great recipe!

    I made this today for my husband and his dad (with grilled chicken and they could NOT stop complimenting me for how delicious this was. The spread is SOOOOOO good with the fresh herbs, unbelievable really. I'm so happy I ran across this recipe!

    This was such a delicious veggie sandwich!! I'm a gal that likes a lot of sauce, so I also added some balsamic vinaigrette and dipped it into the sandwich. Very tasty!

    I found this WAY too oily for my taste as written - the baguette got soggy and lost any texture contrast with the vegetables. I had better luck by lightly oiling just the vegetables, toasting the baguette and rubbing it with cut garlic before spreading the cheese and vegetable mix ontop.

    This was very flavorful, for those who thought it was bland...just add more garlic, basil, salt and peper!

    I didn't use tarragon, didn't have any. Used dried thyme. Used deli slice Mozzarella instead of goat cheese and it was very tasty.

    I added a touch of hummus and some avocado also. I would serve this to my super-picky Indian parents who would love this! Maybe add some red pepper flakes for a kick.

    The chevre is the perfect cheese for this recipe. It helped to done down some of the very strong flavors. The sandwiches (which I put on ciabatta instead of baguette were delicious; my boyfriend loves 'em, too. Giada never steers me wrong.
