    This was very good even though I couldn't find tarragon. I also had to use regular eggplant since my store didn't have the Japanese variety. I just peeled off the skin. This would travel well to picnics or long outdoor events since there is no meat, and all other ingredients hold up so well. Very hearty! I like the idea of greek olives too!

    I am not a sandwich lover, but had to try it when I say Giada making it on TV.
    The only change I made was that I didn't have the tarragon so I left it out. I had some greek olives in the frig so I chopped them.

    I CERTAINLY WOULD MAKE IT AGAIN.

    This sandwich was a wonderful and flavorful and very easy to make. Fresh herbs are a must to bring out the wonderful flavors. Make sure you don't overcook the veggies or they'll be mushy. We used the gas grill and they came out perfect. Thanks!

    I was salivating when Giada was making this dish, so when I went to the grocery store, I picked up the ingredients. I made it for my dinner, and I was sooooo disappointed. The only time I got a taste of any kind of flavor was when I bit into a sun-dried tomato. I usually love Giada's recipes, but I know I won't be making this again.

    Thank you so much for a delicious sandwich! I don't usually eat eggplant, but I will do this sandwich again. I didn't have sun dried tomatoes, but the sandwich was still fantastic!

    This is a great sandwich. I tried it with Gouda Cheese (thinly sliced and it was perfect...I am not much of a Goat Cheese fan! I will be making this sandwich again!

    I'm always looking for meatless sandwich's and this one was right up my alley. I'm not a fan of goat cheese so I substituted it with sliced asiago cheese and it was delicious. Now I have to go on the hike to work it off....
