    I made this twice so far because the first time was a hit! The second time around I didn't have a lemon to zest with the goat cheese. It was still okay, but it really needed that lemon. Also, the second time around, I was in a hurry and used dried sun dried tomatoes. Bad idea. I should've soaked them in water first to soften. I tried it with zucchini too and that was great.

    This was such an easy and fun dish to prepare and eat. The presentation had such a special flair which was awesome. Plus, it was GREAT tasting! I am going to make it a second time and make more towers so we can have as our main meal rather than only one appetizer apiece. I might also play around with different cheeses rather than goat cheese to add a bit of a variety. Overall, this was really great food.
