Great flavors in this healthy & simple recipe.. I use the herb mixture as a marinade, then grill the veggies and put them back in the liquid to soak up a little more. Delish!

Easy, fast and yummy! THat extra vineagrette was also very easy and gave it that umph!... I had to replace the fresh herbs with dried ones but still came out very yummy! Thanks Giada, you just helped me find a way to eat my veggies without frying or removing all the nutrients and I actually enjoy them!... =

I have used any vegetables I had, the dressing was very good, added a nice dimension to the taste, and very easy to make. Will do again for sure.

One of the best grilled veggie marinades I've ever had. Made it tonight and am going to make it tomorrow night again. Definitely go for fresh herbs if you can especially if you can find them at your local farmer's market. It just adds such an amazing punch of flavor.

One of my favorite recipe! Last night I made a great variation! I grilled up the veggies, then layered them on sliced sourdough with some basil and goat cheese, brushed the bread with olive oil and toasted the sandwich in a pan like a panini. Then I reduced the balsamic sauce down in a sauce pan and used it as a dipping sauce! DELICIOUS!

delicious!! I sliced 1 very large zucchini on the diagonal to get large ovals, quartered 2 red bell peppers and added mushrooms and grape tomatoes grilled on skewers. fantastic presentation when put all together, the dressing is SO DIVINE. Made it a fabulous meal with a nice steak marinated in garlic, olive oil and red wine vinegar mmm mmm mmmm! will definitely keep this recipe on hand :

I only had zucchini, sweet onion and green pepper, so I just used what I had. The dressing gave it a good flavor. What's good about the dressing is you can just use it on any kind of grilled vegetable that you have. I grilled mine on the grill. Next time I am going to cook this recipe with rice to put the vegetable over it.

Not a big fan of grilled veggies, but these were great. I could have used more dressing though, since I didn't follow the number of vegetables in the recipe exactly.

I liked it a lot. Only I don't have the means to grill so i put them in the oven at 400 degrees in a sheet pan. then I served them over pasta. I can't believe how everything is so tasty. Some of these veggies I don't really like or I thought I didn't like, but they are so good.
