I also used canned artichokes - they're easier to get. This was a quick, easy, and light meal. I froze some broth to use with a piece of fish another day. I also made a little pasta the next day and used the broth as a sauce for the pasta. Fabulous, versatile recipie.

Used a can of artichoke hearts instead of frozen, used seafood broth instead of chicken, added a pinch of saffron and let it simmer for 15-20 min to develop flavor. Seasoned halibut with shallot salt and lemon pepper, also added those to sauce. Simply Divine!

This is a great recipe to make on a week night, especially having a hectic day at work. My husband enjoyed and said is was a pleasant change from take out.
