I baked it 55min. It was delicious but didn't raise as much as I like. Will try again tho.

Easy and delicious. I made it for dessert on the day my family carved pumpkins. Second year I've made it.

Delicious, easy, and did I mention yummy? Mine took longer to cook as well, but it was only slightly dark and it didn't effect the taste. It is one of those recipes you can add your own little touch to as well.

LOVE! I make it into muffins and add some diced apples and put a simple streusel on top. We make a batch every week.

I love this bread!! Yes, it takes much longer to bake than the recipe says (mine took 1 hour and 5 mins. and yes, the top and sides did get slightly overdone but - the bread is delicious and VERY easy to make. The top and sides got the consistency of a cookie - nothing terrible. Next time, I'm going to try and cover it half way through baking to see if I can get the middle cooked without crisping the outer shell.

Sounds delicious! I was wondering if I could replace the 1/3 cup of apple sauce for 1/3 cup pumpkin puree? Since pumpkin pie spice has all of those spices in it, how much would I use in this recipe instead of the spices individually? If you have a hard time getting it to cook in the middle, I've done this with a pound cake, is bake it in a bundt pan.

Yummy! Just made this cake and it is very good! It made the house smell awesome while baking. I baked for exactly 40 min came out perfect for me cooked through and moist throughout. Great cake for the holidays as well would be good with a glaze over it. It is more of a bread then cake as well. Spices were really good!

Loved it! I took this cake/bread to a gathering this evening and it was a hit. I changed the applesauce to 2/3 cup and the oil to 1/3, cooked for about 55 minutes and it was great. Very moist and loved the spice mixture. This was my first ever Giada recipe, although I love the shows, I'm a fan for life now :

I have made this cake 3 times and cannot get it done in the middle. Its so frustrating because the parts that were done were amazing, if slightly overcooked. I don't understand what I am doing wrong. I've never found anything I just can't bake. I am going to try the suggestion of changing the applesauce and decreasing the oil. Any other suggestions?
