    My family has had this panini several times and whenever I make some, they are winners! They are even delicious without the apple slices.

    My wife loves ham and we had some leftover spiral-sliced ham, so I decided to make this for her lunch today. We have only 1 suggestion to make it a 5-star sandwich. If you are using the whole grain mustard called for in the recipe, cut WAY back on the amount because it overwhelms the flavor of the apples and cheese. I would go with honey mustard on only 1 bread slice next time.

    Here are a couple other suggestions. If you can find it and afford it, get the Gruyere cheese and shred it yourself, even though it's more expensive and more work. Swiss cheese is an OK substitute, but it doesn't even come close to the the flavor and creaminess of Gruyere.

    Cook more apples and thyme than you need and save the rest in the fridge for future use.

    I made this without ham because I'm vegetarian, and it was still delicious! Every ingredient complimented the other perfectly. I charred the outside of the bread a little and it added to the flavor. I'm making it again tonight!

    YUM! Simple and very tasty. The apples & thyme definitely added to the flavor. This was a great way to use leftover honey ham.

    Love this sandwich! I used smoked gruyere and it complimented the ham perfectly. I also lightly buttered the outside of the bread before placing on the panini press. Although I liked the apple element, it didn't add enough to the sandwich to merit the extra prep work so I'll probably omit it from now on. The bread is key. I use country bread from Panera Bread bakery. It toasted up perfectly.

    I made this yesterday with a big bowl of minestrone soup, wonderful pairing. I did substitute swiss and it was very tasty, definitely wanted a second sandwich! Thanks Giada for another great recipe~

    I must say this sandwich was full with taste from the first bite to the last! I enjoyed this late dinner with my daughter and she loved it as well. I did alter it by putting honey mustard, and it was still delicious! I do not like cooked fruits but this had the best cooked fruits I ever had. We plan on making this again.

    I have a panni maker, we make sandwiches all the time. I'm glad I made these...FANTASTIC, I never thought to add apples to them. I'm going to try them on my turkey reubin.

    Delightful! Made this recipe almost exactly as written - Gala apple, no panini press - and it was so delicious. Either make a huge sandwich or make two per person because you'll want more...
