This was the first time I've cooked quinoa and was very excited to try it. However, I was not pleased with the overpowering lemon taste. I will try quinoa again, possibly using only half the lemon juice.

Thank you for this recipe! My 9 year old Olivia and I made this. She brought it for lunch the last couple of days. We both love it!!! We mixed it with shrimp! Yummy!

I'm a little confused as this recipe was not the one I saw on the show Tues. afternoon. What happened to the dried fruit and nuts? Did I miss something? And didnt Giada have sugar in the water and then plump up the dried fruit? Then add the couscous??

I have been eager to learn some recipes that use the "superfood" quinoa, so I was excited to give this one a whirl. Overall it was very easy to make and I was pleased with the results. The only thing I would note is that it packs a lemony punch--in the future I might use a little less juice or nix the zest, especially if serving it with the other 2 dishes from the "Light & Delicious" episode, which also feature a lot of citrus. Aside from reducing the lemon juice a tiny bit, this one is definitely a keeper.

I had couscous in the house, so I used that instead (adjusting the cooking method and mixed in the dressing. So good!!! Definitely have it with the salmon from the same episode.

So nice to find another way to enjoy quinoa. Did not have fresh basil so substituted with baby spinach. Also, would maybe skip the zest next time as I think there would be enough lemon flavor without it.

I didn't have basil and parsley so I used mint and cilantro and it was really good. Goes great with salmon.

I followed the instructions, and my quinoa came out too wet. Yuck. Favor was good. I saw that Emeril like to dry his out on a sheet pan first. WIll try that next time.

been eating quinoa for a few years now and love how it pairs effortlessly with lighter herb and citrus flavors.
@ stephanie, you can find quinoa in with the gluten free grains
or in the natural food sections
    or in with the rice/grains
