This is a fantastic recipe, resulting in a really lovely blend of textures and flavours. My guests raved about it and had several helpings. A great way to shake up the normal vision of 'salad.'

We made this for food-loving friends and it was a total disappointment.We used Meyer lemons in the dressing which added a little more sweetness, added a little sugar and increased the amount of all the ingredients except the endive, but not only was it relentlessly bitter, it was visually dull.

I was very disappointed with this recipe and quite surprised that so many others actually enjoyed it. I generally love Giada's recipes, especially since I grew up eating many of them in my Italian-American home. I do like Belgian endive, but it is quite bitter. (When I want bitter, I enjoy the bitter greens like broccoli rabe, but the enive is admittedly not my favorite bitter vegetalbe and perhaps that is why I don't care for this salad I LOVE the rest of the ingredients and thought this salad would be terrific. Instead, it was way too lemony and bitter. I was really, really disappointed.

Thank goodness I tried this out on my husband before serving it at a holiday luncheon. The ingredients seemed intriguing, but something is amiss. Lemon is the quantity stated is overpowering, cranberries pretty but almost icky sweet compared to the tart green apple and the bitter endive. I had hoped for more.

I love trying new salads, and this one sounded so good! However, it was so bland. Maybe a different dressing would help. I made it for a party, and it was hardly touched.

I used spring mix instead of endive because endive wasn't available.

I read this receipe last night and was intrigued, but I just couldn't imagine how it would all come together. Endive was there at the market today, and some wonderful French cheese that is similar to guierre. My hubster suggested adding a bit of gorgonzola cheese, and WOW. Not a lot, mind you, just enough to pack the punch. This is a very subtle salad, visually. Everything is pale green/off-yellow. But with the bright note of lemon and fresh pepper, it was crunchy, rich, and tasted decadent! A real winner.
