I saw this recipe on TV this week and I could not wait to make it!! What a great episode! It seemed like a really long time for the dough to be mixed/kneaded with the dough hook. Also, I found it hard to incorporate the raisins without some hand kneading. Adding brown sugar and cinnamon to the top before baking sounds like a great idea!

Very good loaf....took forever for the dough to rise. Raisins did not want to incorporate into the dough, even with a bread hook. However, when all was done, it looked and tasted great. Will make again.

After reading a few reviews, I added almost 3 tablespoons of cinnamon which gave it a nice cinnamon flavor but not overpowering. I wish I had read all of the reviews because the middle of the loaf wasn't cooked. After comparing this recipe to a few others, I noticed that most of them have a baking time of 40-45 mins versus the 30-35 mins in this recipe. I'm going to give it one more shot and just bake it for 10 mins longer.

Yummy recipe! I used whole wheat flour instead of brown rice flour and it turned out great. I also sprinkled some brown sugar over the top and next time, I'd like to put in maybe 1/4 cup in the dough as well... we like our raisin bread a little on the sweet side. We live in the Mile High City and I baked for 35 minutes and the bread was cooked through. We've already eaten half the loaf!

I also was very disappointed that the center did not bake and I have made plenty of breads. My yeast was active and the flours were new. I tried to make this bread 3 times and each time the center never fully cooked. Also it did not rise as it should have and was very dense. My husband cut around the 'doughy' part and toasted the bread and both he and my daughter did like the flavor. I know my flours and yeast were good because I had just made cinnamon rolls that raised beautifully and turned out perfectly. I have tried some of Giada's recipes before with success. This was a complete bomb. Too bad I did not read the reviews before I wasted my time and all those ingredients on this bread. Did something get left out of the recipe?

I had the same problem of the bread being doughy in the center. I am still giving this recipe 5 stars because the taste was amazing and I believe the uncooked center is due to the altitude where I live, which is 4700 ft. Does anyone know how I can change this recipe to work at this altitude?

I made this recipe three times and each time the bread in the center was not cooked. I baked it for the allotted time. I t was very tasty but not cooked. any ideas?

While this recipe takes time to make, it is super simple to make. I found the bread to be tender and tasty. I think this bread would wow anyone and compares to any of the best bakeries. Thanks, Giada for another amazing recipe.

It was okay, didn't have a great texture and the cinnamon was very light in flavor. Not my favorite recipe.
