    I do not usually like cheesecake, but made this for a dinner party tonight and not only did my guests loved it - I did too! I used lime rind instead of orange - the only problem was it looked really overly browned adn cracked when I took it out of the oven, so I topped it with some blackberries soaked in lime juice and honey. I used really good, fresh ricotta and added a dash of salt to the recipe too...

    Did not have cream cheese in the house-used Sigis nonfat yogurt...amazing...cut the fat and added to the flavor...had a lemon sauce on hand from something else...drizzle delight....enjpy

    This is the most delicious cheesecake I've ever made. The texture is rich and creamy but the orange zest and honey really lighten it up.

    I think I may have gotten a little water in the crust - likely because I was using a disposal roasting pan with a ridged bottom. Next time, I will likely just put a casserole dish of boiling water on a rack directly below the cheesecake while baking.

    This cheesecake is a staple every Christmas in our house. I have been told it is the Best cheesecake ever by my family who ate it. Taste like it comes from a bakery!

    My husband and I loved this cheesecake. I used Nonni's Turtle Pecan Biscotti and I chose to use the clover honey. My husband said that this cheesecake was the best he had ever eat. It turned out perfect and did not split on top.
