    give this more stars!!! This was increadibly easy..and delicious. I had no problem with anything..just use a cooking spray when you have to butter and it makes everything slide out easily!
    YUM, YUM, YUM... I will tripple next time!

    Put the muffin tin in the freezer for about 20-30 minutes after baking & cooking the cheesecakes. Then remove each cheesecake using a thin table knife in one smooth motion, applying pressure to the walls of the muffin tin. The crust will be intact. Also, use a mini-processor to crumble the wafers and to make the filling. You can then use the rounded end of the miniprocessor knife to tap the crust into the tin (works much better than your finger. For variations, try animal crackers & lemon zest, animal crackers & toasted coconut, amaretto cookies & toasted coconut. Yum!

    Let me say right away that the taste was excellent, but they were really hard to get out of the mini muffin pan. I used a non stick pan and buttered it but they were still a pain to get out. Half of the cookie crumbs were left in the pan. I think next time I will try the recipe in a regular size muffin pan and maybe use some liners. Also, I had a lot of filling left over. I love Giada's recipes. Maybe I goofed this one up somehow !?

    Can't do citrus, so used almond instead. Used "light" ricotta and "light" cream cheese.......was awesome!

    This recipe is easier to make than is suggested. Everyone loved them. Next time I will double the recipe.

    Very good taste & cute as a button. HOWEVER, this recipe has you butter the muffin tin AFTER you tap the chocolate wafer mixture into the bottoms. Hello, how do you get an adequate buttering job done on the sides?? I highly recommend buttering the muffin tin BEFORE you put the wafer mixture in the bottom of each cup. Also, since I followed the recipe exactly & got forced into buttering AFTER, my little cheesecakes had a tough time coming out of the muffin tin & the sides got bunged up-not the most attractive thing for entertaining. All in all, though, an excellent taste.
