I thought this salad was pretty good...the dressing in unique and I didn't think the 1/4 cup of ACV was too much. I made it with the orzo (as Giada suggested as a substitute for the israeli couscous...which we have a hard time finding here except at Trader Joes and it came out delicious, but I'd recommend rinsing the orzo with cold water after cooking otherwise it kind of all sticks together after it cooks in the broth. I also made Anne Burrells Asian Pork Tenderloin to go with this (it's great with pork and the leftovers of both were even BETTER than they were last night. Anne's pork tenderloin recipe rocks. Try it.

I made this and did not care for the ACV or the syrup. I made it a second time using lemon juice and zest, minus the syrup and ACV, and used parsley and chives for the herbs, minus the rosemary and thyme, and WOW....much better the second time around!! If you go for the ACV, 1/4 cup is way too much. And if you have a sweet tooth, you may want to keep the syrup. I just thought that the fruit added enough sweetness.

I used regular couscous, and excluded the thyme and it was delicious! I brought it to a BBQ, and everyone came back for second helpings.

I thought I had a great recipe for Israeli couscous but this one here wins hands down! The colors, the taste and the fragrance were fabulous and all of my friends loved it. Thanks for another winner Giada.

I made the couscous salad with dinner tonight. Oh my gosh, it's delicious! The vinaigrette is so tasty with just a hint of sweetness from the maple syrup. This was a very easy recipe and one I'll make over and over again. Thanks, Giada!

Giada does it again with another great recipe! I made this last night with the chicken burgers with garlic rosemary mayo and they went very well together. The texture is very good with the slivered almonds, apple, and cranberries. It makes a lot so I had the left overs tonight and it's just as good the next day! Try it for something different. Thanks Giada!
