    This was pretty great, but as another reviewer stated, the apple cider vinegar is way too much. Actually the dressing was also way too much, be sure to add it in gradually, and make a small test batch apart from the rest of the bowl so you don't end up with a super oily or a super sour salad. Other than that, and being sure to follow the couscous package directions versus what the recipe calls for, its a beautifully nice salad.

    I also added cucumbers, diced chicken, cilantro and 1/2 a fuji apple along with 1/2 a granny smith for more flavor to make up for not having thyme and rosemary. Those toasted sliced almonds made the texture of this salad! (oh, ps, unless you have more than 2 people, I'd definitely half or quarter the recipe unless you want to fill up on the calories for the rest of the week!

    Delicious! Easy to make and alter as needed. The only thing I will do differently next time is to cut back a little on the vinegar. Otherwise, excellent and four boys and one husband all gave it a big thumbs up!

    What a great dish!!! I made this as a side dish to pork (which I marinated in this vinaigrette! used 1 c quinoa instead of 2 c couscous, ~half of the vinaigrette, and kept the rest the same and it was a huge hit! My family all LOVED it and scarfed it down. This makes a great main meal or side dish; definitely keeping this one!!!

    What a light and delicious meal! My husband and I could not stop eating it. I did makes some changes to the recipe based on items I already had in my pantry. I used Trader Joe's Harvest Blend (Israeli couscous, red quinoa, baby garbanzo beans and orzo in place of the Israeli couscous and a dried berry blend (cherries, cranberries, blueberries, & golden raisinsin place of the dried cranberries. I also added roast turkey to punch up the protein factor a bit. Based on previous reviews, I added only 3/4 tsp of the kosher salt. I will DEFINITELY be making this again!!! Thanks Giada for another fabulous recipe!

    I made this for dinner one night and everyone thought it was delicious. Based on other reviews, I used less salt, about 3/4 tsp. This recipe could serve 10 as a side dish. My family of five had lots of leftovers. We love Israeli couscous and found it, of all places, at Big Lots. My sisters said this is "Awesome", "My favorite couscous recipe", and they also thought it needs more cranberries. (Not true.

    I LOVE this recipe!!! It's so easy to make and so light and fresh! I've made it a million times...even a few times on vacation when we have had access to a kitchen! It is always requested when we go to "get togethers" and is great as leftovers, too! When eating it as leftovers, I like to let it sit out for about 10 min. or so to get it more to room temperature. Then you can give it a quick stir and the vinaigrette mixes back in very well. I agree with some of the other reviews...you do need to cut back on the salt (I use a little less than 1 TB and I go a little heavy on the fresh herbs just because they're so tasty! The vinaigrette is amazing though! I keep it on hand in my kitchen all the time for just regular salads and it's always requested by my guests for their salads if I forget to put it out! Great easy recipe everyone will love!

    For all those looking for Isreali Couscous, check out your local Trader Joe's. Ours has an Isreali packet, plus a wonderful 'Harvest Grain Blend' which includes the Isreali couscous, Orzo, Baby Garbanzo beans, and Red Quinoa. This blend taste just as good with this recipe if not better. I'm not a big fan of Quinoa, but I can definitely eat it and have my toddlers eat it in this blend. Also, if you like this recipe from Giada, try Ina Garten's Curry Couscous (just add less salt.

    Amazing! I receive requests for it every time I cook. I added a little extra herbs, but the recipe is wonderful as is too. Will definitely be a hit!
