    Made for a get together, used regular couscous and cut the vinaigrette recipe in half based on reviews. Turned out pretty good, everyone enjoyed however I will use a full recipe of the vinaigrette next time so it will not be as dry. Very good leftovers.

    I made a second time with Barley and full recipe of vinaigrette and it turned out great, everyone at the party enjoyed.

    This is a delicious recipe I would recommend for home and as a dish to pass. The flavors are complex and not overpowering. I recommend making it with fresh herbs. One small error in the recipe is that the written form calls for too much salt. If you watch Giada make it on TV, she uses MUCH LESS than 1 TBSP of salt, I recommend 1/2 to 1 tsp. Preparing as published is way too salty and masks the rest of the flavors.

    This was a terrific side! The family raved about it and I will make this again! I added the apple/cranberry mixture to the couscous during the last 1-2 minutes on the cooktop along with the dressing so the entire dish would be warm when serving. Paired nicely with a seared tuna and plum sauce with steamed asparagus on the side.

    Delicious recipe! I cut the cranberries back as well, but followed all the other instructions exactly. The herbs are a nice balance -- not overwhelming at all. I'm thinking I might add some grilled chicken next time to make it slightly heartier so that I might take it for lunch. I bet it's great with orzo too!

    Not sure what knoson is talking about. The sweet and savory flavors were amazing, a perfect blend. The only alterations I made is that I used veggie broth instead of chicken broth and decreased the vinaigrette by half (only used 1 tsp of salt.

    Easy, fresh, crowd pleasing side dish. Will definitely be making this again soon!

    I couldn't find Israeli couscous so I used regular couscous and it worked just fine. This is the most amazing couscous recipe I have ever made. I make it all the time now, and when ever I have company they always ask me for the recipe! Its easy and taste perfect, I love it :-

    I am really surprised this got so many good ratings. I found the sweet and sour ingredients completely overwhelmed the dish. I ended up adding minced celery and raw garlic as well as some cinnamon and cumin in order to balance it out and give it depth. After a LOT of doctoring, it finally tastes pretty good but still the cranberry really stands out over everything else and I didn't even use the full amount!

    Delicious! Perfect combination. I can't wait to try it with orzo too! Just a side note in response to the previous reviews. Israeli couscous is the type of couscous she used on the show and it is a bigger-grained variety of regular couscous.

    This salad is one of my favorites. However, if the vinaigrette is prepared according the directions, it is entirely too salty. One tablespoon kosher salt is overly excessive for the amount of vinaigrette the recipe makes. I would cut back the salt to one teaspoon. Additionally, adding a little lemon zest and juice gives the dressing a bit of tartness to balance out the sweetness of the maple syrup.
