Delicious. I adjusted the salt and vinegar like some of the previous reviews, omitted the rosemary, added green onions and used dried cherries instead of cranberries. It was really good and was just as delicious the next day (what little was left.

Served this to a "we love potatoes" crowd and everyone loved it. On the show she used 3T. maple syrup so that's what I did, and I only used 1t. salt. I don't know about the reviewer who said you could halve the recipe for 6 people, it was completely gone at my table of six. I find the Israeli couscous in the bulk section at Sunflower Markets or Sprouts

I just made this "ahead" for dinner tonight, and I am wondering if there will be any left to serve, because I keep going back for more to "sample." It is so so so good, my new favorite thing. Will be my "go to" dish for potlucks. I used only salt/pepper to season the dressing -- just shaken on and I normally would -- did not measure. Used all of the vinegar and the maple syrup and it was just superb. I could eat this for every meal, I think.

So good! I took this to a dinner and got so many compliments! I used only about 1/2 tsp of salt and 1/8 cup of vinegar after reading other reviews. The portions are really large and can feed a lot more than 4! It makes great leftovers though.

I get soo many compliments when I make this dish. I agree about the salt. Im not usually a recipe follower so I from the start did not add the 1Tblsp of salt, I just add to taste. I also add a little bit of honey to the dressing and it helps bring out the taste of the cranberries. : yum

I agree that it has too much vinegar and too much salt, so I adjusted the recipe. I've gotten rave reviews ever since.

I've made this twice now but had the same problem both times; the chicken stock would not evaporate completely and the couscous became overcooked. Next time I'll try reducing by at least 1/2 cup. I also think there is too much salt in the dressing.
