This is a great recipe - either hot, room temperature, or cold. Although, I do question the amount of salt for the viniagrette - I think there's a typo - 1 tablespoon is an awful lot - should it be 1 teaspoon???? In any case, I definitely think it doesn't need 1 tablespoon so I reduced that amount! The almonds add a great texture and crunch! A fabulous party salad because it is great room temperature!

I have made this recipe for multiple parties and it is always a hit. Everyone likes it - adults AND children. I have made it both w/ chicken broth and with vegetable broth and it's great both ways. I have also tried a combo of dried cranberries and golden raisins (when I didn't have enough cranberries and just as good. This is an excellent base recipe that is perfect as is, but is good for variations, too. I do think the Israeli Couscous is essential (instead of smaller grain couscous because the texture of the larger "pearls" really works well with all the ingredients.

My friend brought this camping and it was a hit! I'm making it for my Mother-in laws birthday.

Love this one! Didn't have couscous so I used orzo. Had dried cherries instead of cranberries - same thing. Had already-roasted whole almonds instead of slivered so I just chopped them rather chunky. Everything else was the same. FABULOUS AND EASY! Love it.

Quite the simple and quick recipe. The maple vinegarette was fantastic! I didn't have any almond so I toasted pine nuts - perfect!

This recipe is not only easy, but was so delicious and a huge hit with my dinner guests. Full of flavor and texture. Served this with Giada's rosemary chicken recipe and a tasty Rośe.

    Big plus: quick and easy!

Made it for a dinner party exactly as is and it was excellent! Everyone loved it! Also made for a picnic but added chunks of chicken so it was a main dish- it travels well. Those friends also loved it! What flavors!

This type of coucous is so fun! The flavors really compliment each other and the sweetness from the cherries and maple syrup really make it a little different. I didn't have granny smith apples so I used galas and it was excellent. My two year old grandson even ate it! Will keep as a favorite!
