    These Skewers were just wonderful and I served them at a summer brunch The only trouble I had was with the skewer and the casing of the sausage, so I used a small pick to make a hole in the casing on both sides of the casing and then the skewer went right in without pushing the sausage out of the casing. This is a wonderful dish to server at breakfast or at Brunch Pool Side.

    I just made these for our Mother's Day Brunch and they were a huge hit! The combination of pancetta, pineapple, and sausage was delicious! They were so quick and easy too! I definitely will make them again!!

    I served this at a brunch for a crowd, and loved that they could be made the day before. The skewers made for an attractive presentation on my table, and everyone took second helpings. Their savory flavor went well with the mild French toast.

    My family gave this 5 stars! Everyone was satisfied full without being overloaded.
    I skipped the skewers and put everything on a easy clean up tin foil lined rimmed baking sheet. I added a mix over orange, red and yellow peppers. I also added chopped leeks and both hot and mild italian sausage.
    I served it with blueberry muffins and shredded hash brown potatos fried with green onions, folded with low fat cream cheese in the center.

    We grilled these at a tailgate party, and they were a big hit!! The pancetta really adds a lot of flavor.
