    These were absolutely FANTASTIC! Made them for an Easter family get together, and got many compliments, and there were no left overs! Assembling the chicken salad was a little time consuming especially when stripping meat from the roasted chickens, but definitely worth it. It is so flavorful. Next time I will try cooking chicken breasts, and just chop them up to use, should be easier. But great recipe, and great for potlucks, makes A LOT!

    ABSOLUTELY DELICIOUS!!! I skipped the capers since I didn't have any (and don't particularly care for them and i used white wine vinegar (couldn't find my red wine vinegar and it still turned out great! :D

    I still used the lettuce cups and loved it but my hubby decided to have it on bread lol He says it was still great :

    this recipe is wonderful! I mostly make it without the lettuce cups, and simply serve it as a side dish.
    I don't like crunchy nuts in salad, but my husband and his family love them. (I once left out the slivered almonds and everyone was dissapointed but me- so I've gone back to adding them.
    As others mentioned, it makes a TON, but leftovers are great.

    Super tasty and light... I only did half of the receipe as that was going to be way too much food for a family of 4. It is better the next day.

    I love this recipe so much! It's fresh and light. The crunch of the almonds and the tang of the vinegar are what I love the most! Perfect finger foods and appetizer!

    My friend gave me this super duper recipe since she knows that I am a huge Giada fan! It is perfect for a "ladies luncheon" and while it is sooo easy to make it looks & tastes complex. I made a few changes based on my personal preferces & it tasted fantastic! I charred the vegetables, did not use parsley, used 1 c. minced red onion & used 1/8 c. capers. I didn't use all the vinaigrette. I would highly recommend making & refrigerating the vinaigrette ahead of time to marry the flavors. You HAVE to make this recipe!

    I love this because it tastes good and it is super healthy. Not one "bad" ingredient in the recipe! I was short on ingredients so i went the cheap-o route and used canned white shredded chicken ***** and I didnt make the red wine vinaigrette (which i regret! However even with just using red wine vinaiger the recipe was still great. Creative, neat idea for an appetizer.
