    I added some pre-roasted chicken from the market and made a meal as opposed to appetizers. Both hubby and I really enjoyed!!!
    Next time I will make ahead and grill on the Forman Grill as others have suggested for an even quicker cook.

    I served these at our housewarming and they were gone almost immediately. People loved them. I added a little bit of garlic for a kick. I had a ton of cheese left over from the party so I made the quesadillas the next day with havarti... so good!

    This is the kind of recipe where you can vary the recipe and it still tastes great. The two critical ingredients that make this so good are the carmelized onions and fontina cheese. I substituted basil which gave it a really nice flavor - absolutely delicious recipe!

    I would not think quesadillas with Italian cheese would taste good, but I was pleasantly surprised. I made half the recipe and used low carb low fat tortillias to make the dish lower in calories. I will definately make this one againd

    Two full onions are a bit much for this. 1.5 large would have done just fine. I added chicken and it tasted great. Not the prettiest dinner on the plate but we liked eating it.

    I cut the recipe in half and made them for lunch for my husband and I. Can't wait to serve them to friends. I like one reviewer's idea of adding spinach.

    If only I could make an excuse to eat these everyday! My fiance isn't crazy about the bell peppers, so I leave them out for him, and he still loves them. I use flavored tortillas for an extra punch of flavor.
