    These are so easy to make and before I knew it....they were gone! Everyone LOVED them and the roasted red bell pepper adds a layer of flavor that makes this a quesadilla to remember!

    And....it appears like a complicted dish but it's so easy!

    I served this for a football party. Everyone raved about them. The only thing I changed was from fresh parsley to dried (didn't have time to go to store! The fontina and parmesean cheeses compliment each other so well. I will be making these again.

    These are easy and delicious. Served them 3 times in one weekend. A BIG hit every time. Great to prepare ahead and grill when ready. Lunch with a salad was light and good then appetizers at an impromptu get together were eaten before I could get them all cooked.

    I added some chopped grilled chicken (added some italian seasoning when i was sauteeing it and basil, nixed the parsley. Absolutely perfect in whole wheat tortillas.

    I made these for a football party. One of my guests called out "Who made these quesadillas? They are AMAZING!" He is now my favorite guest and these are now my favorite quesadillas.
