The carmelized onions, roasted peppers, and fontina worked really well together. I didn't care for the parsley and will probably substitute basil next time. This was really delicious and a nice change from regular quesadillas.

What a wonderful twist on the old Mexican theme! We used vidalia onions and omitted the sugar. Simply scrumptious and easy to prepare!

Easy to make and such nice change from traditional Mexican quesasillas. My fiance (Italian loved them!
