    I made this for a party and it was a huge hit! Even my husband, who's not a 'soup person' loved it. I used spinach instead of escarole and added some chicken to the soup. I like either organic or hearty stock instead of the regular broth. Awesome, awesome recipe!

    I make a double recipe so I can freeze at least 6 containers for later in the year. I freeze the soup with 6 meatballs for two people.
    I use 1 large link of hot italian sausage in place of the plain ground pork and it makes the most wonderful meatballs ever!!!
    I also use spinach as well as escarole. My pasta of choice is Fregolo Sardo, which unfortunately is hard to find except on the internet. This pasta is awesome and does justice to this wonderful soup.

    I'm by no stretch of the imagination what I would call a cook. You've made this great dish really easy to fix with great results. My substitutions were the fresh spinach like most others but I used ground turkey to make the meat balls. My secret addition was a bit of cajun spices (a mix to the meatballs. This was easy to do, including drizzling the egg into the mixture. Thanks.

    This is defintiely comfort food, my whole family loves this soup. I too use acini de pepe, felt it needed a carb to be totally satisfying as a meal.

    This recepie looks easy and I will most likely substitute baby spinach for the endive, HOWEVER, I didn't see acini de pepe in the list of ingredients. What the heck is this? Thanks!

    I made this soup this evening and must admit it was wonderful!!! All of my friends loved it... It was made with these modifications; I used meatball mix, which included ground pork, beef, and veal. I mixed the meatball mix with sweet italian sausage, no casings and seasoned it up really well with garlic powder, onion powder, etc... I sub'd using spinach and of course used the pearl pasta... Divine meal... I will be freezing some as my boyfriend and I can't possibly eat all of it!!! THanks Giada for a delicious recipe!

    This is the best Wedding Soup I have ever tasted. I have made it many times. I have even made it with just turkey meatballs for my family who do not eat meat. I have ordered it in the best Italian restaurants, and this recipe beats any I have tried hands down!! I add Orzo to mine and I also use Spinach. But the fresh parsley is a must - dried does not compare. Thanks Giada this recipe is unbeatable!!

    The first time I made This, I had to call my wife into the kitchen to try it right away. This soup was so delicious. I followed the recipe to the T, using homemade chicken stock. Thank you. This is a keeper.

    I served this recipe at a family gathering with about 8 people. It went over really well. Everyone was impressed with the combination of the fresh flavors and the heartiness of the soup. Italian wedding was always my favorite soup, but now that I have this recipe, I will never have it from a can again!

    I was disappointed in the soup. I was looking forward to it. However, after reading some other reviews, I'll will try again and not use low sodium broth and will also add the acini de pepe that was recommended. It was a little bland.
