I didn't think my friends would eat this soup at a football party, but it was a smash!! I recommend using regular (not low-sodium broth. I made two batches, and the one with regular chicken broth tasted much better to my husband and I. This was such a great recipe!!

We really liked this soup. My kids, who don't really know what a vegetable is, ate this and I used a can of spinach instead of the escarole/endive and they STILL ate it! It is very tasty and I recommend it highly.

Great soup. Am on a sodium restricted diet, used very low sodium chicken boullion and escarole and still was great. Will make my own chicken stock next time. Tastes even better the next day.

I loved this recipe, it was easy, except I couldn't find broth without sodium. It was just a little salty, next time if I have to I will go to another grocery store to find low sodium broth.

Unlike other Italian meatball recipes, these are fairly small in size. If you are familiar with Swedish meatballs, this is the size you are after. I made 32 meatballs with the ingredients listed. With the amount of cooking experience I have, my standards for good food are quite high. It's no secret fresh ingredients and lengthy preparation generally yields the best results. I am pleased to say this quick recipe yields amazing flavor without hurting your pocketbook. The meatballs are sooo tender you'll wonder how something so simple could be this good.

This is a wonderful Wedding Soup recipe. The only changes I would make would be to make the meatballs smaller and omit the salt in the meatballs. All in All, this is a keeper.

I saw this on an episode of Everyday Italian and decided to try it. We love soups. I had most of the ingredients on hand and it was very easy to make. I could not find endive or escarole, so I used Baby Arugala. It was delicious! My husband and I both had seconds. My 2 year old daughter loved the meatballs. This is definitely a keeper and one I'll make for guests.
