Holy Cow - this is AWESOME! It tastes exactly how you would expect Italian Wedding to taste in your favorite family owned, old school Italian restaurant. I was so blown away with the results - and it was so simple! The only time consuming thing was rolling all of the meatballs because I don't like them to be too big when they're in soup.
I used escarole because I personally prefer it. I cook it as is for a light starter, or if I want it to be a meal by itself I'll add a little ditalini.
Can't say it enough - this one is an absolute winner!

As reading the recipe, I was a little bit skeptical about it because the receipe sounded too simple to me.
But this simple recipe made really good Italian Wedding Soup!
I was glad to try this recipe. My husband liked it alot.
Thanks for a good recipe!

Really tasty. I substituted ground chicken for the pork and beef, escarole instead of endive and added one cup of orzo instead of drizzling egg. Everyone loved it, which is rare.

Made this for dinner tonight with the following changes: omitted onion and cheese, used ground turkey and lamb instead of her suggested meats, used kale instead of her suggested greens, used Imagine no-chicken broth and a bit of Pacific chicken broth (just to use up what was open from dinner earlier in the week.
It was fabulous and will definitely be added to our meal rotation.

My boyfriend made this for me last night. He too used pasta, Orzo more specifically, instead of the egg and bread and it was sooo delish! The parmesan on top is a nice addition. Very impressive and so easy! It took hardly anytime at all to cook!

Move over Chicken Noodle...this IS the soup for the heart and soul. I used ground turkey instead of ground beef, the pork keeps the meatballs moist. The first time I made this recipe I browned the meatballs before adding to the soup but I believe cooking them in the broth not only adds to the flavor of the broth but contributes to the recipes authenticity. For the greens, I recommend Kale. It is more sustainable and by adding to the broth just before serving, it will keep it's perfect tenderness. Like other reviewers, the soup was even better the next day. This is a recipe I will pass on to my family and generations to come. Thank you Giada!

I loved this receipe. I made a double batch. I skipped the bread and the egg swirled in the broth and addded ascini pasta to kinda give it the wedding soup feel. I also added more garlic and fresh mushrooms only because I love them both so much...

Delicious! Soup has to be one of my families most favorite things to eat. We eat it all the time no matter what the season. I work with Better Recipes so I am always reviewing recipes and also scoping out new recipes to make for my family as well. A have a box of just soup recipes and I am always looking for more, so when I saw this one I knew I wanted to make it. Italian Recipes are definitely my favorite and Im so glad I found this one!

I used Swiss Chard because that is what came in my produce box this week. Also, I added some additional garlic and some red pepper flakes. We like things with some zip in this house! I love soup and will try it again maybe with spinach.
