I WAS SCARED THIS WOULD BE TOO MINTY BUT IT JUST HAD A HINT OF MINT, I JUST LOVED THIS RECIPE, IT WAS SO EASY TO MAKE, I WILL FREEZE THE REST OF THE PESTO FOR NEXT TIME, I CAN'T WAIT TO MAKE THIS AGAIN.

This recipe was so simple and so good -- what a great way to "use up" a huge bunch of mint! I was thinking....I can never drink this much mint tea!
I tossed this all with some pasta and halved cherry tomatoes. So easy and delicious!

I made this and served over sauteed onions, corn and zucchini ribbon "pasta" and it was amazing. Substituted chopped almonds for the pine nuts and added extra garlic to great effect. It was amazing and will definitely be repeated!

My husband LOVES pesto! In the past I have not had success in creating an edible pesto. I saw this recipe on Giada's show and hoped that this would be the day, and it was. We have an herb garden with basil and mountains of mint so this was the perfect recipe for me to try. It was great! A definate keeper. The only thing my husband said was that it could use more garlic. (I doubled the amount the recipe called for but he wanted more. Two garlics cancel out, right?
Thanks for this easy and tasty pesto!

I've made this over and over, each time with equal praise! I make pesto and freeze it in 1/2 cup batches (perfect for tossing with pasta or dishes like this. We skewer and grill the shrimp and brush the pesto over right when they come off the grill...makes for a beautiful presentation!

This is a wonderful dish on nights when you need to fix something fast. I made the pesto a day ahead, and just had to cook the shrimp and pasta the night we had it. It was great leftover the next day as well. The only thing is that the pasta recipe that goes with this made way more pasta than I needed. On the whole, this is going to be a go-to recipe for me and my husband.

MMM, this was SO good! I used fresh herbs from my garden, and the mint made it taste so fresh with a hint of sweetness. I made it with smaller shrimp, because the local fish market didn't have pre peeled and deveined jumbo shrimp, but it was lovely. I served over rice, with steamed veggies topped with parmesan. A hit with the family! Used a little leftover pesto to mix with the rice for my toddler, and he loved the flavors. He ate it all, and wanted more!

I made this tonight for dinner and it was absolutely delicious. The mint really gives it a refreshing flavor. This one is a keeper!
