    I was a little nervous about the mint pesto, but it was wonderful!! I served this with brown rices with lemon and parsley and some asparagus. what a great change for the standard dish!

    I have never reviewed a recipe before but just had to sign up to review this one. It is one of the BEST pesto recipes I have ever tried. The mint makes it taste extra fresh. I always make a double batch and freeze half for next time. My husband and I avoid the pasta and just enjoy the pesto shrimp as the main course. It's simple, quick, and my new Go-To dinner at least once a week.

    Having never tried pesto we weren't sure what to expect. Hubby is not a big pasta-lover, so he elected to have his shrimp served over rice. We absolutely loved this recipe!!

    Refreshing and delicious! I used higher quality jarred pesto. Served with the arugula pasta "served with" recipe below. Hubby hates mint so I saved it until the end. Sauteed it in butter and put it on top of my dish. I will make again!

    used basil pesto that I had made and froze from the summer as I did not have mint and served w/spinach noodles.

    delicious and we used our Italian bread to clean our plates.

    The shrimp was great but the pasta was too overpowering with the mint and basil together. I probably wouldn't make it again...but its worth another try with some experimentation of ingredients...

    My husband and I saw this on her show and decided to make it for dinner. It has become a consistent favorite of ours, and I am requesting a cookbook for Christmas!

    We're all pesto lovers in my family so we loved this. Thought the mint was a fresh and new approach to add to the pesto. Quick, easy and perfect! And I loved the tip on the show about not adding the parmesan into the food processor. I have always done this and had no idea the heat of the blade would change the taste. Thanks for the tip!
