This recipe was very good but needed some work to be excellent. I did the following changes. Since Foccacia isnt very available where I live I bought a fresh french bread loaf from my bakery. I hallowed the middle and cubed it. I buttered the inside and the cubes. I toasted the bread until browned but not to hard. (the cubes toast faster, so I removed them about five minutes after toasting I let loaf cool. In a bowl I added eggs, milk, a couple pinches of flour, chopped fresh parsley, pinch of crushed red pepper, grated parmesan, salt and pepper to taste, a little bit of garlic powder. (you can add veggies, like spinach or broccoli or whatever you wish I then poured that mixture into a buttered medium heat skillet and allowed to slightly set, but not cook all the way,* I then immediately removed from heat, tossed in toasted bits of bread to soak in the little bit of moisture. I then covered the loaf part in foil to avoid too hard of a loaf and spooned into the bread mold, topped with parmasan cheese and baked for 15 mins

I made this today and was very pleased with the result. The recipe is very easy, and it looks quite elegant and sophisticated when it comes out of the oven. I will definitely be doing this one again. Great recipe for a brunch!

I knew when it didnt come out very well that I should have read the reviews first. It was really gummy and bland and the bread was REALLY hard. I had to bake it for an hour and then slice up and bake even longer. Wont do this one again. Too bad, it looked so good when Giada did it!
