This was delicious! I used 2 small, juicy lemons and it was perfect. I also sauted (I can't put the accent mark over the e 1/2 of a small onion and 1 rib of celery diced fine in a small amount of olive oil, as advised by other reviewers. I will make this again, my family loved it.

I loved this soup! I added chopped onion and celery, per other reviews, and only used the juice of one lemon. I used a mini bowtie pasta instead of the spaghetti. I would definitely taste it before adding any salt. Mine didn't need any because of the chicken stock and the cheese. It's a pretty thick soup, and doesn't make all that much, so I might double the recipe or at least add more liquid next time.

I don't know if the lemon I used was overly strong, but the soup came out so sour that I couldn't finish it. It tasted good, but was just too lemony. I also made the mistake of adding the cheese too early --I thought the spaghetti was done and then I had to cook it an additional couple of minutes, which concentrated the flavor further. I would suggest you keep testing it, and be open to diluting it a little bit.

I'm going to make this recipe later today, but I have to comment about other postings that say to not add cheese during the cooking process and only add it at the end. If you read the recipe, Giada has you put in an optional Parmesan cheese RIND. Not the cheese. The rind gets simmered much like you would simmer a bone or bay leaf. Then it gets removed and is discarded. Cheese is added at the end of cooking, when you add the finishing touches of salt and pepper, and then it is ready to be served. I just wish people would read and follow instructions before commenting that "they wouldn't add cheese until the very end". Duh.

I made this the other day when I felt a cold coming on. It is delicious! I love the lemon in it. The only thing I did different was to saute some onion, carrot and celery first in olive oil. It is curing my cold! Thanks Giada!

1st out of all foodnetwork shows - yours is the best! I love your recipes. I eat healthy and this is the way you cook.
OK for the soup - very good, loved the lemon although 2 lemons = not a hint but a lemon strength. 1 lemon would give a hint of lemon - all depends on your palate. I did not have parsley but had cilantro - and used that - and viola it was good. hubby sick and perfect cure for him - and I loved it.

My least favorite food is chicken noodle soup. I decided to make this because my poor hubby came down with a cold, and I hate feeding him that gross canned soup. He couldn't believe it when I actually poured myself a bowl and ate the whole thing! It smelled so yummy that I just had to try it. He loved it and I loved it too. I can't think of a better soup for someone with a cold, or someone without one!

This soup is amazing! I didn't have the parmesan rind but it still turned out great. Next time I make it I'll likely try rice rather than spaghetti but it's great as is!
