What a fabulous cookie! They are cakey, lemony, and SO good! Don't worry, you won't even know there's ricotta in there.

These cookies hit the spot!! My husband loves lemon cookies so I madde these and they were so much better that any plain old lemon cookie....they tasted like little lemon cakes. I definitely recommend this recipe!

These were just okay. I like the glaze, but the cookie itself was bland with a strange spongy texture. My sister actually commented "I've never had a cookie before that bends, and doesn't break!" They were nice with my morning coffee, but didn't really fulfill my dessert craving. If you want something cakey and lemony, Paula's Lemon Blossoms use the same glaze and have way better flavor. Next time I want a lemon cookie, I'll just mix some zest in Ina's Shortbread Cookies and drizzle some glaze on top of those.

I love this recipe. The recipe is so easy, the ingredients are everyday things you keep in your pantry and the result is delicious. The cookies are very delicate tasting and the lemon glaze with the fresh zest is gorgeous. SO glad I tried this one. :

I followed the recipe exactly and they turned out great! My batch yielded 48 cookies instead of 44. These cookies have just the combination of sweetness and tartness. They also go great with a nice cool glass of Sauvignon Blanc. I will definitely keep this one!

These cookies are yummy : Made according to directions and they came out delish! I even froze some for @ 6 weeks and took them out today and they were still great. Didn't last long around here. Must try with lime juice and some with orange juice next time.
I too live at a high altitude (~7500 ft and most cookies never work. These did and they are certainly keepers. Thank you!!!

Quick and easy and sooo good! The light lemon flavor and ricotta cheese make these cookies one of the best I've ever made.

These cookies were so delicious they didn't last long. They almost taste like lemon madelines. I also tried a batch with lime juice and they were also good.
