Both my husband and I thought these were a definite 4 1/2 stars, but couldn't rate that way. First bite is very tart, but a nice light dessert. I did reduce thyme to just over a TB and added a TB of lemon zest as others suggested.

I loved these and could easily eat the whole pan. I loved the thyme/lemon combo - it was different, but I think it works really well. They were very easy to make. The only change that I made to the recipe was to use only 1 Tbsp of thyme, upon the recommendation of other reviewers. I didn't find the thyme to be overwhelming at all - it was just right.
Side note: My husband didn't like them - he thought they tasted like "pizza with sugar on top." Too bad for him - more for me!

I was very curious about this recipe. It sounded very unique-- the lemon glaze instead of the traditional lemon curd and an addition of thyme!
Even though I hate sugary glaze on anything, this glaze acutally plays an important role because it gives the lemony taste without the curd on top. Thyme was very interesting and I loved it, however, it did feel like a bit overpowering. Also the bars come out very thin. Adding lemon zest will be definitely great, and I also would want to add real vanilla beans next time to make it gourmet bars.

These are SO good!!! If you love lemon, you must try this. The combination of lemon and thyme is so delicious. It is very simple and easy to prepare, you do not need to be a baker to make this. I accidentally forgot to put vanilla, but it still came out great. It smelled so good coming out of the oven, so I couldn't resist it, I cut a small piece and tried it. Omg, it was so good! I glazed about half of the pan, and left the other half unglazed. They are both tasty. I wanted to stick to the original recipe since it was my first time making it, but next time I think I'm gonna try adding lemon zest like some of the reviewers are suggesting. I will be making this a lot for sure!

Bottom line, I LOVED these bars! Glad I read many of the reviews before I made this though. I could see that the ingredients were not for classic lemon bars, but had a hard time envisioning what they might be like until I saw that they were more of a shortbread. The taste was refreshing because the glaze on top was so lemony. The actual bars were not so sweet, but they were yummy! I will make these OFTEN!

I have fresh thyme in my garden and, since it is getting close to the time when the frost will kill the thyme, I decided to make these. They are unusual, that's for sure. I love tart things and these were tart! However, it took forever to mince the 2 tablespoons of thyme. Mine didn't look like the photo at all. The glaze was very thin as was the bars themselves. I don't know if I'll make them again!

These are so delicious! I made them a few days ago looking for an easy treat to make. This was so easy to make and didn't even take long in the oven. I made this without the glaze but it was still so decadent. I like the fact that they're not too sweet and this is the perfect little cake to have with a cup of tea. As soon as I opened the oven, the thyme gave it this irresistible smell and such a buttery flavor. The texture of these bars is so unique and. This is sure to make a delectable, flavorful, healthy treat!

A friend brought these to an ice cream social and I found them to die for. I could have eaten the whole pan. I balked when she said they had thyme in them but tried one anyway; glad I did. I think this is my new favorite bar.

A refreshing twist on lemon bars. When you make these, keep in mind they're more of a shortbread with a lemon glaze. They don't have the same texture as a lemon bar. We all loved it!
