I made these without using the fresh thyme and added a little lemon zest to the icing - they were lemony, light, and delicious! My family who is accustomed to 'all-things-chocolate' thoroughly enjoyed them...I'll make them again at Easter since they were so simple & a small quantity - just perfect for a holiday table!

WE HAD A HOUSE WARMING PARTY FOR SOME FRIENDS SO I PRINTED OFF ALOT OF GREAT FINGER FOODS AND THIS WAS A HIT WE ENDED UP MAKING 40 OF THEM........ WOW.. SO THAT TELLS YOUR SOMETHING........

Once again a unique paring of flavors, lemon and thyme and it was a hit! Light and fresh tasting and something new for the palate. Really enjoyed these.

LOVE this recipe!!! The combination of fresh lemon juice, vanilla & fresh thyme is to die for! And the lemony sweet glaze is the perfect finishing touch. I used a bit more thyme (even added some to the glaze -- and also added fresh lemon zest to both the dough & the glaze. Delicious!!! Also fantastic if you substitute LIME for the lemon. Have made these for guests & given batches as gifts, and EVERYONE absolutely loves them! Including me...

I wanted to scrub my tongue after finishing a bar. While I normally enjoy a mix of "sweet and salty" flavors, I was woefully disappointed by this recipe. The lemon and thyme did NOT marry well with the sugar. The texture was rather bizarre. I felt like I was eating gauze pads. My husband doggedly attempted to try them again the following day... and couldn't finish it. We ended up throwing them out.

I loved the lemon thyme flavor combination. I'm sure it is not for everyone.
These are not the standard crust with curd layered lemon bars. I also like they are less fragile and can hold up to the Arizona heat better. I used 1.5 scant tablespoons of fresh thyme. I did add fine lemon zest to the bars as well as to the glaze. They are very simple to make. I used a rubber spatula to spread the bar dough in the pan and didn't even get my hands dirty.
I made it twice in 2 days and it was difficult not to want to eat several pieces at one sitting. The second batch I used 1/2 whole wheat flour and I think I like it even better. I shared the first batch, I did not eat the whole thing myself, although I thought about it :-.

I loved this recipe...and since I love blueberries and lemon...I pushed fresh blueberries into the crust before I baked it and then with the lemon glaze...OMG...amazing!

My skeptical famiy couldn't get enough of these bars! As an after thought. I made a blueberry compote to spoon over the individual servings...and the guys tried to lick both bowels!
