WOW. This was so delicious. I could eat this salad everyday and live happily for the rest of my life. The salad dressing is to die for.

Giada hit it out of the park with this recipe. It's the best new salad I've had in a long time. What a wonderful surprise for the tastebuds. Very refreshing! It was a great addition to our Thanksgiving feast. Thank you.

This dressing was really good! And this comment is from someone who do not eat salad.. Instead of arugula, I used spring mix. I don't like capers or onions so I emitted those.. I used the beans and I added pecans. For the dressing, I used half of the lemon juice, a little bit mote than 1 tbsp of maple syrup and 1 tbsp evoo. I think next time I can use 1/2 tbsp of evoo.. It's very versatile and you can adjust it to your taste.. I'm planning to try chick peas instead of beans for my next try..

OMG! This was so good, so easy to make, and such a perfect combination of flavors I ate the whole bowl in one sitting (nothing left over for lunch tomorrow! A perfect compliment to salmon marinated in pineapple and pineapple salsa. Forgot the onions by oversight, did not miss them, used a can of Primo mixed beans because that is all I had on hand but worked out very well. And was it so easily put together, a perfect last minute addition to the meal. I'm gushing, I know but this recipe fulfilled the three fundamentals of "will I bother or not" 1. On hand ingredients or "close enough" substitutions, 2. Minimal cooking utensils, 3. Quick and easy with maximum eye and taste appeal.

Fantastic!! The thought of putting maple syrup in a dressing really didn't appeal to me - but based on the reviews I thought I would give it a try anyway. AM I GLAD I DID! I loved everything about this salad - the spice of the arugula, the bite of the capers, the touch of sweet in the dressing, the tang of the lemon, and the smooth flavor of the beans. Love love love.

I have totally enjoyed this salad...I love everything in it and is so easy to make with items I always have on hand. For those who do not like raw onion (as I have in the past, I soak the slices of raw onion in ice water for at least 10 minutes before adding to salad...this takes the "bite" out of raw onion, and still can have the crunch along with some milder flavor.

Whoa! I was skeptical, particularly about the maple syrup (really, syrup?, but dang, this salad is fabulous. I'm making it tonight for the third time.
