    Made this salad but used romaine and added a few other veggies for a heartier salad, however my review is really for the dressing, it was delicious, my husband even commented on the dressing and he usually never says a word one way or the other, this is a keeper for us for sure, thanks, giada

    Excellent salad. I used mixed greens instead of arugula and added feta cheese. The dressing is fabulous.

    We loved it. Made it for the two of us and I think I added a little bit more arugula. I also added tomatoes, just because we love tomatoes in our salads. Tossed it well and made sure to bring the heavier beans and tomatoes back to the top for a pretty presentation!

    Common sense told me that a 15 ounce can of cannellini beans would completely weigh down and overwhelm 5 ounces of arugula, so the result wasn’t quite the nicely composed salad displayed on Giada’s show. Good job to the food stylist, though, but a misleading presentation. The flavors were okay, so maybe chopped arugula would work better for this "bean" salad. Oh, and too much onion, even when using a "small" one.

    This is my first time making an "arugula only" salad and I was pleasantly surprised at how much I liked the spiciness of the greens. The salad tastes delicious considering how quickly it comes together. Definitely something I'll make again.

    This recipe is fabulous! I didn't have any maple syrup so I just used honey. I thinly sliced the onions and put them in with the dressing to "marinate" a few hours ahead of dinner - the onions were much less pungent this way.
