This is a fabulous recipe. I have made it many times over the last two years and it always gets raves. It is one of my go-to recipes for pot lucks or any other casual get together with friends. I am not the biggest Giada fan but this recipe is easy and delicious and always a crowd pleaser.
If you actually follow the recipe as written and use good quality ingredients (note that it calls for fresh herbs and fresh lemon and broth, not water, etc. there is siimply no way you can call this recipe lacking in flavor or bland. It's just not possible! This salad is packed with flavor.
Honestly, this is great cold in the summer but it's really great at room temp all year round. I also like to add lemon juice and I like to double the carrots and/or add celery sometimes. I'm not a big olive fan but this recipe really does taste better with the olives. I have made this with a variety of different lentils and while I prefer the French Green the Black buluga lentils are fabulous in this as well. I also like this better the next day so I try to make it the night before I need it if I have the time.

I absolutely love this recipe. I am a vegetarian, and I get tired of making the same things all the time. I needed a new way of getting protein. This dish is healthy and delicious. I leave out the olives, bc I hate them. My husband loves it too! The lemon is really the icing on the cake. I do agree with other people that the lentils take longer to cook than stated.

I really liked this recipe and it's a good way to try lentils. I didn't have lemons so used lime and orange zest. Good nutritional recipe.

I thought the lentil salad was very good. It had a nice flavor and texture. And it was great for a hot summer night. Will make again. Oh.. and very healthy too. I used brown rice instead of white.

I just made this and it's wonderful. I was worried with the one poor review, but there's a reason that only one person rated it poorly. I don't like rice that much either and this is just full of flavor and texture.

The salad was good. I felt the lentils needed a bit more time. I used brown rice instead of white for a little better nutrition. The recipe won over my hubby so I would have to say it was a success.

This was a great side dish that takes you away from the usual potatoes or rice. The lentils I used took much longer to cook than stated in the recipe. It was a good hour plus to get them soft but was a real rich and tasty dish.
