    This dish was excellent. It is easy to make and tastes and looks great. I also substituted the rice for brown rice to make it a little healthier, but I'm sure the dish tastes fine either way. I did not think that there were too many olives... they help make the dish very tasteful. I took others' suggestions and added a little bit of lemon juice. I will definitely be making this dish again! Highly recommended.

    I liked this salad but only gave it 4 stars b/c I thought it needed a bit more punching up. I added a little feta on the top and really enjoyed it. However it is so quick and healthy and still brings in a nice flavor.

    I made this for the first time today and it really hit the spot! With summertime, sometimes you want a light meal and this definately was a winner!!! So easy to make too!

    This was a great new idea for lentils. After all they are very good for you! I did not use the olives and added raw spinach with the lentils to the saute'. I really enjoyed this dish and my kids (2&4yrs old ate it too.

    I made this one night during the dummer to serve along with grilled fish and it was absolutely wonderful. My husband licked the plate clean!

    I usually have good results with Giada's recipes and this one is no exception. I substituted brown rice for the long grain rice in the recipe and had to adjust the cooking times. The lemon was a great addition to more traditional middle eastern rice and lentil salads. Was nice a creamy the next day. Just add a little feta for a nice lunch.

    My boyfriend and I both enjoyed this. I used basmati rice and I used vegetable broth vs. chicken. I also only used 4 of the olives vs. 1/2 cup. Drizzled with lemon juice left over from the lemon used to make the zest and olive oil. Subbed celery for carrots as I don't like carrots. Very tasty and I prefer it cold or room temp.

    I like Giada but not this recipe. If you are looking for a lentil recipe we love Emril's lentil salad with goat cheese.
