    I love this soup, perhaps the person who said that its the worse soup ever, can't cook.
    Because I made this soup several times. And it was a hit each and ever time.

    Worse lentil soup ever!! Threw the whole thing in the toilet. My scicilian mom in law made THE best lentil soup . Unfortunately, she suffers from mild dementia and no longer remembers her recipe. I thought perhaps this recipe may have been close since there was no bone or ham involved like hers, but there was no flavor or creaminess either! Won't make again!!

    As someone cooking for one can be a challenge; especially if you hate eating the same thing all week! This recipe is not only easy to scale down (I made a 1/3 recipe but it's also delicious!! Maybe I can eat the same thing all week long (or at least a few days. Perfect comfort food for a Minnesota winter day.

    I didn't put in the pasta, it would be fine, but I don't think it's necessary. Very good and so very easy. It's a really cold and snowy time here and nothing better than Saturday night soup. I did add some red pepper flakes just a few.

    Was never a big fan of lentil soup. This was excellent. Hearty and tasty. Loved the diced tomatoes and freshly grated parmesan in it.

    This soup was very hearty and delicious! I actually sautéed the veggies then added everything to a crockpot. I put it on high for 2 hours (because I had to leave and the lentils were cooked perfectly when I got home. I also added sausage I had cooked earlier at the end, which gave the whole soup a great meat flavor. Yum!

    This was one of the BEST soup recipes I have ever tasted. So rich and layers of flavor. The thyme adds a nice accent through the dish. I did add a small amount of chicken sausage, a box of frozen chopped spinach and red pepper for some heat. This will be a staple at my household for years to come!

    I read several of the comments and reviews and used this as a baseline to create the perfect lentil soup (as usual I made some of the suggested adjustments. I included some additional ingredients like frozen chopped spinach and ground pork sausage (1lb.--like Jimmy Deans' or your choice vs. ham hocks or smoked neck bones. I sauteed the vegetables, browned the sausage and followed the rest of the recipe. I added a pinch basil and Ms. Dash. I love flavor!! Oh my God! It's very very good. I froze half it and just ate the remainder this past weekend. BTW, I boiled the elbow macaroni separately and added it as suggested by a reviewer. The addition of frozen chopped spinach and ground pork makes for a very hearty and delicious soup. Use low sodium chicken stock if you are concerned with excess salt. Good luck!
