    I'm a lentil fanatic and this soup was just wonderful!! The parmesan cheese on top really gave it a nice creamy texture and a little added salt. It was great!

    This soup was wonderful and easy. I made a couple of changes, I added shells instead of elbow. The shells hold the lentils inside and also I added some cooked Italian sausage in chunks (no casing. I also at the end added a little mozzarella cheese. What a hearty meal!!!! My family loved it.

    I substituted yellow split peas for the lentils and nixed the pasta. This is the best soup I've ever tasted!

    I haven't tried the leftovers yet, but I just made the soup tonight to rave reviews. Only complaint I received was it wasn't thick enough. That should happen as it sits overnight I would think.

    I accidentally used a canned totatoes with green Jalapeno and it came up wonderful! It has gotten a little bit of heat and it goes so well with mild melted cheese! :

    Other reviews that noted the large quantity are accurate--I still have some in my freezer, because the two of us couldn't get through this in a week. Tasty soup. I like my lentil soups a little smoother, so I tossed some of the soup in the blender before adding the pasta.

    You can't miss with this soup!!! It really is wonderful. I used vegie broth for my vegetarian son but we ALL loved it. Used 12 cups of broth plus a cup of wine and put in 12 oz of lentils. Will make again and again!!
