    This recipe was delicious!! I added 1 lb of ground pork sausage, (from a local farm, that I browned previous to putting in with the veggie's. I also used half chicken broth and half water because I didn't have low-sodium broth. I used 4 cloves garlic and 3 bay leaves. My husband and daughter were asking for more!! Great winter soup! Thanks Giada!!

    So easy, so tasty, and so healthy! This has become a regular in our family's fall and winter line up. The only way that I deviate from the recipe is by cooking the pasta separately. The times that I have cooked the pasta in the soup, the pasta has come out a little gummy.

    Amazing! Easy to make and a huge hit. I used the diced tomatoes with oregano and rosemary, but otherwise did everything as listed. didn't drizzle olive oil on it either. This will become one of our staples!

    Just made some for lunch. It was delicious. I'm going to serve it for dinner tonight, see what my family will think. I didn't have celery, i just added more carrots. and a little less pasta. I also didn't have enought chicken broth so i added two cups of water with chicken buillon (kors. it was just yumm. I didn't drizzle olive oil either. Try it you wont regret it. the recipe says 1lb ( aprox 1 1/4 cups not true. 1lb is more than that. I only used 1 1/4 cup.

    Love this soup, perfect time of year when it starts getting chilly... Some warm soup and bread and snuggles with the one you love by the fire.

    Made the soup the weekend because i found a lot of red lentils in the pantry. Really hearty and good flavor. I didn't even bother with the parmesan and olive oil at the end. Tastes even better days later.

    I love this recipe! I also made a few modifications, similar to below:
    -browned 3 hot italian sausage links & added into veggie mixture
    -added a bunch of chopped kale about 2 minutes before adding can of tomatoes

    Suggestions for next time:
    -pasta isn't necessary; JoJo is right, the soup is hearty enough!
    -For those of you who would like a more brothy soup, use 1/2 the amount of recommended lentils
    -if you prefer your veggies (the carrots & celery more soft than crunchy, just saute them for longer, about 15 minutes instead of 5-8.

    Even though Giada is a genius, goddess, etc.. I did add/change it just a little. First I browned some diced italian chicken sausage links (Archer Farms brand, removed and set aside. In the same pot, I proceeded with the rest of the steps, using 3 carrots and 3 celery stalks, and a 28oz can of diced tomatoes and at the end I threw one bunch of chopped kale. I omitted the pasta, this was hearty enough as is, but perfect for us! I used 11 cups broth as called for (you could do at least one to two more if you prefer it more brothy, and a 1 lb bag of lentils. SO good, especially for this time of year! And, pretty healthy I'd say! Oh yes, and a couple bay leaves, and I removed the woody stems of the thyme before serving.

    I have had a bad experience with lentils in the past, but Giada's dishes are so good I decided to give it a try. I was not dissapointed. I did nto alter the recipe at all. It was so easy and delicious. My dad had thirds and my mom who is the pickiest eater ever even ate it. Definately recommend !!!
