    PERFECT!!!- used lemon biscotti and it was only a 6 oz package-no problem. Yes to using food processor. Drained ricotta in a cheesecloth for about 20 minutes and used limoncello that I had made from her site and have kept in freezer for almost a year. I had bottled it in individual 12 oz bottles. Thanks so much for something so refreshing. Oh-somehow in my house a little did not go a long way

    Easy to make even for the first time and great flavor after letting it chill overnight. I added a sweetened whipped cream with a hint of limoncella to top it off.

    I made this recipe as our dessert at Christmas. It was absolutely perfect! Light and fluffy after the filling (but delicious traditional meal. Everyone raved about it and it was so easy to make. This is a definite "keeper" in my personal recipe file. Can't wait to try another recipe from "Everyday Italian" for New Year's Eve.

    These are wonderful. I agree with use the right equipment--I tried a mixer instead of the food processor for the filling and it was lumpy. Food processor is only way to go for this one. For those having trouble with the lemon zest for this and the limoncello, I suggest a microplaner. No one should be without one!

    The recipe is great, as long as you have all the equipment. As in...don't try to crush biscotti in a blender! Otherwise, tastes great!

    This cheese cake is excellent. I served it to some folks who had never had limoncello...I have lots of it...and they just raved..it is a keeper.

    I make these cheesecake squares for a bridal shower dessert, and they were a hit! The lemon is very subtle--and no one could have just one square. The recipe is also so easy!
