    My family enjoyed your Macaroni and Cheese but had to use Montary Jack to replace the Parmesan but it turned out ok.

    This is the best mac and cheese ever! Since some reviewers mentioned the sauce was runny, I added an extra TBSP of flour to the milk/cream mixture. (I thought Giada said to use 2 during the show, too, but the recipe calls for one. Anyway, that did the trick. Great flavor! The crunchy top is to die for.

    Versatile recipe! For example - meat choices - pancetta, prosciutto,
    Italian sausage, meatballs, etc can be substituted for the ham.
    Think about your choice of pastas that could possibly be used!
    The cheese - Fontina, Gorgonzola, Pecorino Romano, Parmigiano Reggiano, Mozzarella, Mascarpone, Ricotta, &
    Provolone, Asiago, Gouda, etc. Mex cheeses are really excellent in this, too! (Italian herbs in seasoning
    this dish is excellent in this dish, too; but, esp. if U use Mex cheeses U can use Mex herbs/spices - although
    with the Mex cheeses I used Italian herbs without sacrificing flavors - just a 'fusion' of flavors. But,
    if U do use Mex ch AND Mex meats - be sure to use Mex seasonings!
    To make it extra cruchy on top: Add seasoned breadcrumbs
    - breadcrumbs, garlic, sea salt, fresh ground pepper,
    - browned in EVOO & butter (1/2 & 1/2 remove from heat, then add: parsley, lemon zest, thyme, rosemary,
    basil, fresh grated Parmesan cheese. Mix well. (Keep it in the frig.
    Just 'food' for thought!

    Though it was a little runny it was still very tasty. I'll definitely make this dish again but I'll probably cut the liquid a little.

    This recipe is AWESOME! I'm sorry, but I had to substitute the lowfat milk for the whole milk but it still came out amazing. It's really quick and simple too. My grocer didn't have the true fontina cheese at the time so I used Fontinella in its place. I don't know if it changed the recipe much but it was excellent.

    This Macaroni and Cheese is the very best I have ever had. Easy to make and the taste is so fresh. I used exactly what was in the recipe..whole milk, cream, etc. It couldn't have been better. It is a little runny but when it sits in the refrigerator over night (for those great left overs a lot of it is soaked up. I don't mind that at all. Please give it a try and I bet you will agree it is super. This recipe will be added to my "keeper file".
