This was my first time marinating squash...It was sooo good! Did just as the recipe said and it came out perfect! I will do this often.

This is my favorite way to cook summer squash. Definitely cut them along their vertical axis to make long strips rather than in coins as shown in the photo. They are easier to maneuver on the grill and the grill marks look more impressive. The charred marks and the sharp marinade bring a great depth of flavor that cannot be replicated by sauteeing. I have occasionally used white wine vinegar in place of the lemon juice with good results. Another tip is to cut them thicker on the mandoline than you would imagine. They lose a lot of water and will shrivel and burn before your pretty grill marks have a chance to set.

GREAT, I added mushrooms and onions as others said. My picky 14 yr old loved the onions. This will be the recipe I use from now on.

Simple. My go-to grilled veggie side during the summer months. You can use the same recipe and the throw the veggies on top of the stove and saute them during the winter. Takes good as well. Don't cut your veggies too thin. They won't be mushy.

We add 1/2 lb. of mushrooms to the mix, then grill them over a charcoal fire - yummy! Such a nice change from traditional veggie side dishes, plus it is simple and creates few dishes - perfect for summer!

Easy prep and easy to grill. I cut the Squash and Zucchini on a pretty severe bias making longer pieces about 1/8 - 1/4 in thick. I used a disposable grill sheet ( aluminum on one side of my gas grill. Turned once and let the other side get nice and toasted. Even the kids loved em.
These were NOT "mushy" due to the ability of the juices to drop away.

I tried this once and it was so great that it became a regular in my kitchen. I would reccomend this to anyone to try to put a fun and creative vegetable on the menu. If you don't want to use a grill, I've found that a George Foreman style grill is great to use.

I love this recipe. I don't have a grill and so I simply use this marinade and then toss the veggies in a skillet and get them nice and cooked. They don't get mushy and taste amazing. I also cut the summer squash, zucchini and mushrooms really tiny and use the same marinade to create a cous cous salad too.
Thank you! My husband and 3 year old devour it everytime its made in any form.

Ok, so this was tough to rate. The marinade's taste is GREAT. But I've used this recipe about 4 times now, and each time I grill the veggies, they come out WAY too mushy. Maybe there's too much oil in the recipe? Because the oil just runs everywhere on the grill. Any suggestions? Did I do something wrong? The marinade itself does taste good though!
