    Loved the cupcakes! They were moist and had a melt in your mouth feeling. The icing runs so becareful how much you put on the cupcake cause you will be cleaning up a sticky mess if you put to much on them. But the homemade icing taste was good. I brought some for my co-workers and they loved them. I will for sure make this recipe again!

    absolutely love these CREAMY cupcakes - i replace the white cake mix with cherry cake mix and call them "cherry berry bites" for a friend who is allergic to strawberries - i use frozen raspberries instead...these are so delightful and folks keep asking for them

    I absolutely loved these cupcakes! And my friends could hardly believe I made them! I followed the same measurements and instructions but instead made about 18 regular sized cupcakes which had to bake for around 30 minutes and they came out just as well. I'd definitely recomend this recipe to anyone!

    I am a huge fan of Giada and an avid baker. I've made these twice now-- once several years ago and again today for a baby shower. They have a very boxed mix taste, which should really be expected. If you are used to making your cakes homemade, you are really going to notice this ( and it isn't good : They also don't look very pretty (well, not as pretty as in the picture here. The glaze is pretty thin and drips off the sides and down the cupcake papers. I was trying to be very neat and wipe up the drips as they were happening so they didn't dry like that but it was impossible to get them all. Tips-- for those who say they have problems with the cupcake sinking in when you take them out of the oven... try not to open the oven at all until they are done baking. I have learned this from experience making these : Also, try not to have any fans or open windows. Blowing air can make baked goods sink in too.Overall, I will not make these again.

    These are delicous and dangerous!!! I got the recipe from the lowfat recipe search results, but they do not seem low fat based on the cheese and cake mix formula, the serving size is what makes them low fat. No biggie.

    So, I was originally going ot make half a batch at first so only added half the cheese, but then absent mindedly added the full amount of all the other ingredients, so I did not get much of the cheese flavor coming through in the muffin part, but it made it lower fat that way (tee hee.

    Anyways, they were great. Didn't have to mcuh problems with the break apart like some people had. And The glaze was REALLY sweet fresh made (close to too sweet, but not quite, but next day after having them in a tuperware the sweetness of the glaze seemed to tone down. The amount of sugar is maybe too much texture wise. I think next time I would use just 2 cups and let the glaze do more spreading and running off the edges for better coverage of the tops.

    The cupcakes are on the soft side so one has to be careful when taking them out. Although they are soft I think that's what makes them a perfect bite. They are fluffy and so delicious. I think the mascarpone has a lot to do with the softness and moistness in the batter. I am not fond about boxed cake mixes but decided to give it a try since it was a last minute treat. Next time I will reach out for a white cake recipe to make the cupcakes and I can definitely say I made it all from scratch. So about the frosting... It was okay, it lacked strawberry taste and too sweet. Maybe a strawberry frosting would do better to top those babies off.

    Perfect! nice and light. I didn't have problems with the cupcakes sticking to the liners. It has a perfect glaze. The only thing is I added one or two more strawberries to the glaze. I put sliced strawberries on top for a decoration but all the juices made the glaze watery and thin out so I recommend not doing that. Try putting nutella on top, it's delicious too!
