I made this recipe with organic vanilla cake mix - and it came out great. Really sweet and delicious, especially with the tart flavor of the strawberries. Be sure to spray the muffin pan - even if you use the new silicone bakeware.

Very tasty and perfect for summer. I don't know that the mascarpone affected the taste much, but it seemed to make a difference in the texture of the cupcakes, which were very smooth and not too crumbly. I only needed about half of the glaze that the recipe makes. I would cut the powdered sugar and increase the strawberries. The frozen berries actually add a little needed tartness. Before you blend, definitely drain the berries well though, otherwise it is runny, as others have said.
I serve these with champagne, and they make a sophisticated dessert for the non-baker! :

holy crap these are sweet. I used Giada's recommended Duncan Heins (spelling? white cake mix and, combined with the really runny and messy frosting, made for an extremely sweet cupcake. I had even added cream cheese to the frosting, as one person suggested, but it was still too runny. I'd recommend using either another cake recipe or another frosting recipe. I used a simple lime icing for half of the cupcakes and it was much better because the tartness of the icing balanced the sweetness of the cake a little better.

These little guys just melt in your mouth! After reading come of the comments about the glaze being too runny I decided that when I was going to try making them I would add 1/2 C of mascarpone cheese to the glaze. It thickened it just a bit and took out a little bit of the sweetness that had also gotten bad reviews.
*great for showers (make half with strawberry glaze for a baby girl and half with blueberry for a baby boy!!!

This is the best and easiest cupcake recipes. The cupcakes came out super moist. I used one mini cupcake dish and one regular sized dish and they both came out great. I recommend using a cream cheese frosting instead of the strawberry glaze because the glaze is a little runny.

This recipe was good and made for a great bite-sized snack. I wish the mascorpone flavor come through a little bit more (as the batter was delicious. Also, I would add more strawberry puree, my glaze was still quite thick and overly sweet. But the real strawberry flavor comes through nicely.

The texture of the cupcake was simply delicious! And it was so easy to make, just add the mascarpone cheese to a box of white cake mix and bake.
The icing was a little melty though. It stiffened up a bit after being applied to the cupcake but it was very thin.
