Simple and delicious! The cupcakes are super moist & yummy on their own so you could even serve without the glaze.
I did read quite a lot of the reviews before I made these and would note that the cupcakes do come apart easily just after baking, if not in perfect cupcake form. I was making these with my 3.5yo so some of our paper cups were overfilled, these were the ones that fell apart when removing them from the pan (tops came right off; the paper cup acted as a seam. Fortunately, we were able to gobble them up! - waste not want not.

This is only a review for the strawberry glaze. I was in a hurry & purchased vanilla cake mix to make cupcakes for a birthday party & thought I could add this glaze to it. Everyone in my family disliked the glaze. My 5 year old wouldn't eat it and that says a lot when it comes to cupcakes! He also loves strawberries! He did eat the cupcakes w/out the glaze. So we improvised and used fresh fruits on the side and Reddi-Whip. Everyone at the party loved them! Maybe the glaze would go best with the mascarpone recipe and that I haven't tried. So my apologies for that. Just don't try the glaze with regular cake mix.

One of the best cupcakes I ever had! It was easy to make and everyone who tried it, loved it. I stored it in the fridge because we had extra. It tasted even better the next day. Definitely a go-to recipe for me.

Very light. I cut the recipe in half because we are only two adults and a baby. It was very easy to make and the cupcakes were very light and moist. The only thing is that I believe there is a typo. To make 48 mini cupcakes you need two mini muffin tins not four, unless there are mini muffin tins that only hold 12 units.

A little too sweet, both the cupcakes and the glaze...They caved in a bit. Didn't taste much strawberry, just sweet sweet sweet. I did like the richness the cheese gives.

I don't usually like a box cake, but these are wonderful and so versitle. However, when I make them they always pull away from the cupcake paper liner. Does anyone else have this problem or know how to rectify it?
