    WOW! These cupcakes were amazing. But i wasn't too big on the strawberry glaze. I also added some really good vanilla essence that i get from haiti to the batter. Everyone at work loved them.

    These cupckaes were so good and moist! The mascarpone gives them a creamy flavor and the strawberry glaze a nice tangy zip. You can't eat just one. My only complaint is that the cupcakes didn't bake up so pretty on my end, but nonetheless, tasted fantastic. A real hit!

    These cupcakes just melt in your mouth when you eat them warm. They're absolutely fabulous! Everyone at my work nearly died when they tried them because they were so good.

    I had a hard time with the glaze at first, I thought it tasted too powder sugary- so I added a little more strawberry, about a tablespoon of room temp butter that I creamed, and then some lemon zest, too! The lemon zest really brightened up the flavor, I added about a quarter of a lemon's worth of zest. My husband doesn't really like sweets but he loved this! The cupcake is so moist and fluffy.

    I thought the best way to glaze the cupcake was to dip the top in the glaze. Let the excess drop off while still holding it upsidedown, and then it doesn't spill all over the sides and isn't as messy.

    I have made these twice now and I think the mini size of them is perfect. Bigger cupcakes are too rich. The first time I used pureed raspberries and it was amazing!!!!!

    My daughter had this recipe TIVO'd for a month before we finally tried it! I was impressed that my daughter knew from Giada's teaching exactly how and when to add what. The taste, perfectly delicious. The size, convenient to share with others. This was a great first experience baking with my 9 year old aspiring chef. :

    I made these cupcakes over the weekend and my family and I LOVED them. My sister told me they blow away Sprinkles Cupcakes. My son wants me to make these cupcakes every weekend. Instead of using the mini pan size I used the regular cupcake size pan.
    These cupcakes were the best I have ever tasted. My only problem was I could not find mascarpone cheese,after 3 different markets I finally found it at Fresh/Easy market.

    These are hands down the best cupcakes I have ever made. It doesn't get more moist than these. The first time I made them I did the strawberry glaze but found them to be really really sticky. The second time I made the batter as directed and frosted them with chocolate frosting and placed the fresh cut strawberries on top. No matter how you make them they are delicious!

    These were a big hit for Mothers Day! I was kinda nervous reading some other reviews but i am so happy. I made these regular sized cupcakes, they turned out very nice, not rich at all. It's a very nice batter. I used 2 cups of Organic powdered sugar instead of 2 1/2 cups and used thawed organic whole strawberries, The icing was very nice, i took my time spreading the icing on, keeping it just on top of the cupcakes, i made sure the icing was dry enough before eating! THEY WERE WONDERFUL!
